Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 cup vegetable oil
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 cups oats
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix canola oil, brown sugar, eggs, and vanilla until well blended.
  3. In a separate bowl combine the flour, baking soda, and salt; stir into the sugar mixture.
  4. Mix in the oats and chocolate chips last.
  5. Drop large rounded spoonfuls onto a prepared cookie sheet.
  6. Bake for 12 minutes.
  7. Allow to cool for 5 minutes on the baking sheet before moving to a wire rack to cool completely.
