Basic Tomato Sauce

(source: Jamie Oliver); serves 6–8

  • 1 large clove of garlic
  • 2 tbsp olive oil
  • 2 teaspoons dried oregano
  • 3 X 400g tins of Italian plum tomatoes
  • 1 tbsp red wine vinegar
  • 1 handful of basil, roughly chopped
  • Salt and pepper
  • 2-3 tablespoons extra virgin olive oil

Instructions

  1. In thick-bottomed pan gently fry the garlic with olive oil
  2. Add oregano and tomatoes
  3. Mix gently but not too much as you don’t want to release the tomato pips. Makes it bitter
  4. Bring to boil and simmer for 1 hour
  5. Add vinegar, then stir and chop up the tomatoes in the sauce
  6. Add fresh basil
  7. Season
  8. Add 2-3 tablespoons of extra virgin olive oil

Notes:
2 servings is approx 2.5 ladles
