Chocolate Brownies (Laura Wu)
  • 185g dark chocolate
  • 50g white chocolate
  • 50g milk chocolate
  • 185g butter
  • 3 large eggs
  • 275g golden caster sugar (or regular white sugar is also ok)
  • 85g plain flour
  • 40g cocoa powder

Instructions:

  1. Preheat oven 180ºC (350ºF)
  2. Butter and line an 8in tin/2 in deep
  3. Melt dark chocolate with butter and leave to cool
  4. Whisk eggs with golden caster sugar until thick and double volume
  5. Pour cooled chocolate mixture on top and fold
  6. Sift plain flour with cocoa powder and fold
  7. Stir chopped white and milk chocolate pieces
  8. Pour into tin and bake for 25 minutes (we usually do an extra 5, check, and even more time if necessary)
  9. When it comes away from the sides, it is ready
