Appropriation Soup
- 3-4 tbs olive oil
- 2 cups chopped onion
- 2 cloves garlic (crushed)
- 2 cups sweet potatoes or carrots (chopped and peeled)
- 1/2 cup celery
- 3/4 cup peppers (chopped)
- 1 1/2 cups cooked chick peas
- 3 cups stock/water
- 2 tbs tomato puree (tomato paste)
- 2 tsp paprika
- 1 tsp turmeric
- 1 tsp basil
- 1 tsp salt
- dash cinnamon
- dash cayenne
- 1 bay leaf
- 1 tbs tamari or soy sauce
Instructions
- Sauté onions, garlic, celery, sweet potatoes in olive oil for 5 mins
- Add seasoning except tamari
- Add stock
- Simmer til softish (20 mins)
- Add remaining veg and chick peas and simmer for 10 mins until tender
- Add tamari
